Kidney stones feel random when they hit, but the research on how they form is not random at all. One of the clearest and most consistent findings in the stone literature is this: animal protein raises your risk. Not as a rumor, not as a wellness trend, but as a repeated finding across metabolic studies, large population cohorts, and meta-analyses.
Here is what the evidence actually shows.
In a large study out of Shanghai, tracking over 69,000 women and 58,000 men, researchers found that people in the highest group for animal protein intake had a sixteen percent higher risk of developing kidney stones compared to those in the lowest group. When they isolated non dairy animal protein specifically, meaning meat, poultry, and fish rather than dairy, the increased risk was fourteen percent. The dairy component did not carry the same risk, which points the finger specifically at meat.
A controlled metabolic study took this further. Fifteen healthy adults were rotated through three separate weeks, each built around a different animal protein source: beef, chicken, or fish. Every phase raised uric acid levels in both blood and urine. Beef in particular pushed up the calcium oxalate saturation index, a direct marker of how likely urine is to crystallize into stones.
A dose response meta-analysis pooling multiple prospective studies found that higher intake of non dairy animal protein carried a real, measurable increase in stone risk, and that this risk climbed further with total meat and, more sharply, with processed meat.
And then there is the extreme case. A clinical report on a patient following a carnivore diet, essentially all meat, documented a doubling of urinary uric acid and a doubling of uric acid supersaturation after the switch. The researchers pointed to a mechanism that often gets overlooked: animal protein contains no fiber, and fiber feeds the gut bacteria that help regulate stone forming compounds in the body. Take away the fiber and you take away part of the body's own defense system.
Why does this happen physiologically? Animal protein is acid producing. Digesting it increases the acid load your kidneys have to process, which in turn increases how much calcium and uric acid get pushed into your urine while lowering citrate, the compound that normally helps keep calcium dissolved rather than crystallized. More calcium, more uric acid, less citrate, in more concentrated urine, is close to a textbook recipe for a stone.
None of this means animal protein is the only variable. Genetics, hydration, sodium intake, and underlying health conditions all play a role too. But among the dietary factors researchers can actually measure and adjust, animal protein intake, particularly red and processed meat, shows up again and again as one of the strongest and most consistent contributors to stone risk.
