vegan caesar salad

Ingredients for the dressing:
- 1/2 cup raw cashews, soaked in water for 4 hours or overnight
- 2 tablespoons lemon juice
- 2 tablespoons nutritional yeast
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 tablespoon capers
- 1/4 cup water (adjust as needed for desired consistency)
- Salt and pepper to taste

Ingredients for the salad:
- 1 large head of romaine lettuce, washed and chopped
- 1 cup croutons (ensure they are vegan and gluten-free if needed)
- 1/4 cup vegan parmesan cheese, grated (optional)
- Lemon wedges for serving

Instructions:

1. Drain the soaked cashews and rinse them well.

2. In a blender or food processor, combine the soaked cashews, lemon juice, nutritional yeast, Dijon mustard, minced garlic, capers, water, salt, and pepper. Blend until smooth and creamy. Adjust the consistency by adding more water if needed. Taste and adjust the seasonings according to your preference.

3. In a large salad bowl, add the chopped romaine lettuce.

4. Pour the desired amount of Caesar dressing over the lettuce and toss until well coated. Start with a smaller amount of dressing and add more if needed.

5. Sprinkle the croutons over the salad and toss gently to combine.

6. Optionally, sprinkle vegan parmesan cheese on top for added flavor.

7. Serve the vegan Caesar salad with lemon wedges on the side. Squeeze some fresh lemon juice over the salad before enjoying.
