Coffee Brewing and Cleaning Procedure

Follow every step. Do not skip.


PART 1: CHECK AND CLEAN THE COFFEE POT

1. Check the Coffee Pot

Before brewing, confirm the coffee pot is empty and clean from the previous batch.

If there is still coffee in the pot:

• Remove the entire coffee pot with the base from the machine
• Bring it to the dishwashing sink
• Place it on the right side perforated basket of the sink


2. Remove the Lid Assembly

Removing the top section can be tricky. Be gentle.

• Locate the large black locking handle on the lid
• When the handle is pushed forward, the lid is locked
• Pull the black handle completely back to unlock
• Once fully back, lift the upper lid assembly out
• Be careful with the piece connected to the gray flap mechanism inside

Important:
Do not twist or force any parts. They can break easily.


3. Drain the Coffee at the Sink

Once the lid assembly is removed:

  • Dump the remaining coffee out through the top opening
  • Do not drain through the faucet spout.
  • Dumping through the top is much faster.

After emptying:

  1. • Rinse the pot
  2. Reassemble the lid immediately so no parts are lost or damaged

4. Clean the Exterior of the Pot

Before returning the pot to the machine:

  1. • Wipe the outside of the coffee pot
  2.  Wipe the bottom base of the pot carefully
  3. • Make sure no coffee residue remains
  4. Do not return the pot until both surfaces are clean.

5. Clean the Drain Tray

Behind the machine at the bottom is a gray drain tray.

  1. • Reach behind the machine
  2. Locate the small plastic locking tab
  3. Unlock the tab
  4. Slide the tray completely out
  5. Empty all liquid
  6. Slide the tray back in
  7.  Lock it securely

This tray collects spills and must be emptied regularly.


6. Drain the Coffee Spout

Before finishing cleaning:

  1. • Open the coffee spout
  2. Allow any remaining coffee inside to drain out

This prevents old coffee from sitting in the system.


PART 2: GRINDING THE COFFEE

7. Set Up for Grinding

  1. • Place the porcelain bowl with two coffee filters inside under the grinder
  2. • Check that the small metal gate on the hopper is open
  3. • Confirm grind dial is set between 13 and 14


8. Grind the Coffee

• Press the top button to turn on the grinder
• Grind slowly at first to prevent overflow
• Be ready to turn it off if the bowl fills too quickly

When removing the bowl:

• Tap it lightly against the grinder so loose grounds fall into the bowl


9. Weigh the Coffee

The bowl with filters weighs about 12.7 ounces.

Make sure you press TARE on the scale first.

For a 0.75 gallon batch:

• You need exactly 4 ounces of ground coffee

For a 1.5 gallon full batch:

• You need 8 ounces of ground coffee


10. Adjust the Weight

  1. • Keep a spoon near the grinder
  2. • If slightly over 4 ounces, remove a small amount with the spoon
  3.  If significantly over, discard excess grounds
  4. • Do not save extra grounds

Grind carefully to avoid waste.


Clean As You Go

After grinding and weighing:

• Use the paintbrush to dust off the counter around the grinder
• Keep the station organized at all times

Always clean as you go.


PART 3: PREPARE FOR BREWING

11. Prepare the Brew Basket

• Remove old filters from the brew basket
• Rinse the brew basket at the dish sink
• Place the two filters with measured coffee back into the basket
• Slide the brew basket fully back into the machine

Make sure it is seated all the way back.


12. Return the Coffee Pot

Before placing the pot back:

• Make sure the gray cap on the lid is open

If the cap is closed, hot water can splash out during brewing.

Now:

• Push the coffee pot fully into position
• Make sure it touches the back of the machine completely

Both pot and basket must be seated properly before brewing.


PART 4: START BREWING

13. Start the Brew Cycle

On the Fetco touchscreen:

For 0.75 gallon batch:

• Press 0.75 / Half Batch
• Press Start

For 1.5 gallon batch:

• Use 8 ounces of coffee

Once you press Start, the machine will brew automatically.
Let the cycle finish completely.


PART 5: CLEAN AND RESET

14. While Brewing

• Wipe down the counter
• Organize the cups
• Return all tools to their proper place

Leave the station clean and ready for the next person.


15. Final Step: Refill the Bean Hopper

• Fill the hopper to the top with fresh beans
• Keep it clean and neat

A full hopper shows guests we serve fresh coffee and that the grinder is ready.

Always keep it full.
